Dancing Bear Appalachian Bistro is under the direction of Shelley Cooper. Born in Memphis, TN, Chef Shelley was surrounded by family who focused on providing a bounty of farm-fresh Southern cuisine at every meal. She credits her Southern culinary roots to the combination of her family, hailing from both the Mississippi Delta & the Blue Ridge Mountains of North Carolina.
